A little organicgirl Sweet Pea Salad Blend drizzled with the brand’s White Cheddar dressing — sometimes the simplest flavors can hit the spot so well.
I was recently invited by the brand to take on their week of greens challenge, which involved eating like a bunny at at least two meals a day. (Disclaimer, y’all, organicgirl was kind enough to hook me up with plenty of greens and dressing to enjoy.)
Now, this isn’t too unusual for me to do anyway — I typically throw spinach into my morning smoothie and eat at least one salad with lean protein a day. But, I jumped at the chance to deviate from my ho-hum Trader Joe's arugula and balsamic dressing for a week.
First off, I have to say that I loved how fresh the greens were. (BTW, I found the greens and dressings in the produce section at Publix.) Regardless of the blend (whether it was the baby spinach, which I used in my smoothies, or one of my faves, the Sweet Buttery Mache Blend), the greens were colorful and healthy looking, and stayed fresh until I ate them. (Of course, I was moving through greens at a pretty rapid pace, too.)
For the smoothie, I would blend a handful of the spinach, 3-4 strawberries, a banana, a 1/4 coconut water, 1/2 cup of plain kefir, and 1/4 of yogurt. As for the salad, the recipe I kept returning to was the Sweet Pea Salad Blend or the mache blend topped with chopped low fat hard salami and the White Cheddar dressing. Yum doesn’t even begin to describe how good it was. But if White Cheddar isn’t your thing, try the Kale Parmesan — it was pretty taste bud- friendly, too!
Part of the challenge was to show how incorporating greens into your diet helps keep your skin looking healthy. (See this article by nutrition and health expert for NBC’s TODAY show, Joy Bauer, for the skinny on why greens are so good.) I have to admit that because I already was eating a lot of greens and am blessed with good skin, I didn’t see as much of a change here. But I can say that my skin continued to look healthy and radiant throughout the week!
More than anything, I was impressed with how flavorful and fresh the greens were. And the ingredients in the dressings were just as healthy as they were tasty. So, if you’re looking for a way to integrate some healthier eating options (that will make you look and feel better) into your diet, I’d recommend trying this “fit” out. I’m hear to say that sometimes all it takes to make that salad look 10 times more enticing is to put a little bit of that White Cheddar dressing on top of it! #GetYourGreenOn
